Crockett’s Public House in Maple Valley, Washington, is the second Crockett’s the Gilkey Restaurant Consulting Group opened since we began our journey with Crockett’s owner in 2011. While continuing to provide operations support since the first Crockett’s opening and realizing their immense success the team signed a lease for number two.
As with the first restaurant, the Gilkey Restaurant Consulting Group assumed the role of project manager leading brand development, design development, menu creation & recipe development, operation’s manual development, management recruiting and pre-opening training supervision. Crockett’s number two is now the busiest restaurant in Maple Valley receiving high guest satisfaction for both food and service.
Next the Gilkey Restaurant Consulting Group opened iQ Eatery in Pensacola, Florida. iQ is a fast-casual lunch and dinner restaurant and a meal plan business rolled into one.
Again, the Gilkey Restaurant Consulting Group assisted the iQ team with kitchen design, menu creation, recipe development, operation’s manual development and pre-opening training supervision. While only the first of many iQ Eateries, the Gilkey team is excited for our future together and our continued work on recipe development and operating systems.
In May, the Gilkey team traveled to Alaska, as we have for the past 13 years, launching new restaurant concepts for Holland America – Princess (HAP). This year, the Gilkey team assisted with the launch of two new restaurant concepts located at the Denali Princess Lodge. Named after Fannie Quigley, the famous Alaskan prospector, trapper, and cook, Fannie Q’s Saloon features locally inspired dishes in a modern saloon setting. Serving breakfast, lunch and dinner, Fannie Q’s Saloon offers indoor and outdoor seating as well as live entertainment.
The second restaurant, Grizzly Burger, is a fast casual cooked-to-order gourmet burger concept including fresh salads, fish sandwiches and boozy shakes. The Gilkey Restaurant Consulting Group assisted HAP with brand development, kitchen design, menu & recipe development, operating system’s development and on-site training support.
Most recently the Gilkey Restaurant Consulting Group opened Barlow’s Public House on the Vancouver Washington waterfront. Barlow’s is located in a stunning new development, The Waterfront, which boasts large concrete sidewalks that extend over the Columbia River. The most unique feature of Barlow’s is the self-serve craft brew wall. Guests can walk up to the brew wall and select from 20 different fresh beers brewed by the Barlow’s brewmeister. The Gilkey Restaurant Consulting Group assumed the role of project manager supporting the owners of Barlow’s Public House through the process of creating and opening their own restaurant, as well as developing the brand identity, designing the interior, kitchen and bar, developing menus, creating recipes, implementing the operating systems, recruiting the General Manager and training the opening staff.
