During phase one the owners of Seattle’s Local 360 asked the Gilkey Restaurant Consulting Group to visit their restaurant and assess all kitchen related financial systems and submit a written brief detailing our recommended strategies and tactics enabling them to lower their kitchen related operating costs. When we first arrived, food cost was running at a 38 percent and hourly kitchen labor was 16 percent.

We were then asked to engage in phase two by implementing our proposed strategies and after 6 weeks were able to improve Local 360’s profitability by 10 percentage points.  Food cost was reduced by 8 percent and kitchen labor was reduced by 2 percent.

Recently the Gilkey Restaurant Consulting Group has been asked support the development of key kitchen operating systems to improve efficiency and accuracy of their results.
