Designed to engage all the senses and celebrate the rich traditions and heritage of Alaska, this 10,000 square foot restaurant creates a dining experience both entertaining and educational, from the rich textures and native artifacts used in the decor to the aromas of the freshest Alaskan Seafood roasted and grilled. PALOMINO – RESTAURANT – ROTISSERIA - BAR - Winner of Nations Restaurant News “Hot” Concepts Award in 1997, Gilkey helped design, develop, open, and operate 15 Palomino Restaurants as Director of Operations and Director of Food and Beverage during the brand’s growth years. Known for its rich and stylish design and extraordinary food, the Palomino concept features Old World Mediterranean cooking methods such as wood-fired ovens and rotisseries, and uses fresh local seafood, meats and produce from the local markets in each city. |

THAIFOON – TASTE OF ASIA - Winner of Nations Restaurant News “Hot” Concepts Award in 2001. Thaifoon offers a uniquely diverse menu and wide selection of authentic flavors and dishes from Asia – a Taste of Asia – in an upbeat, colorful, bistro atmosphere. First opened in 2000, we designed, developed and operated the initial growth of this exciting brand. Average unit sales equal $4 - $6 million in 6000 square feet. |

KINCAID’S FISH, CHOP AND STEAKHOUSE – Kincaid's recalls the simpler time and place of the 1950’s Great American Fish, Chop, and Steakhouses. Reflecting a masculine design, Kincaid’s average 9000 square feet and serve hand-cut seafood and steaks grilled over an intensely hot live Apple Wood grill. |

RUBY’S DINER – Celebrating 1940’s Americana, Ruby’s is a nostalgic diner concept which prepares fresh ground hamburgers, fries, and delicious hand spun shakes and malts. With its big band music, red vinyl booths and white Formica table tops it yearns for a simpler time; yet it is the mouth-watering food that keeps people coming back. |
| YUMITOGO.COM – YumiToGo.com is an Asian fast casual restaurant combining three hot and growing fast casual food categories; fire grill-cooking, wok cooking, and custom gourmet tossed to order salads. Unique from most fast casual Asian concepts, YumiToGo.com presents an easy to understand and diverse menu available for counter pickup and high-speed delivery. Our team was involved in brand development, design development, menu development, start-up, and operations management of this unique fast casual restaurant concept. |
