Project Scope - Created and developed this new 10,000 sq ft restaurant concept for Princess Cruise’s largest resort in Denali National Park. Services included test marketing restaurant concepts with target audience, full restaurant and food service design, food and beverage menu and recipe development, development and implementation of all FOH and BOH operating systems, management team training, supervision and coordination of pre- opening team member training, concept launch, on-going consultation in the operations of the concept.
